Kombucha Mocktail
— Kombucha. Be sure to check the sugar content! Sugar content varies fastly from brand to brand.
— Squeeze of lemon
— Herbal tincture. My favorite to add is Urban Moonshine Bitters or Wooden Spoon Daily Balance.
Place in a fancy cocktail glass enjoy. Whether your trying to drink less, are sober curious, or just want a refreshing treat, this is a great option.
Super Greens Smoothie
If getting enough greens in your diet is a challenge, I highly recommend them in through a smoothie you can easily make in the morning!
This is a smoothie I drink on the daily, as it’s delicious and is full of green goodness benefits. It’s super alkalizing, tropical, fresh, green, and herb-forward. The squeeze of lime at the end makes it!
1 frozen banana
2 cup filtered water
2 TB coconut butter (butter, not oil. this is the base of the smoothie)
1 cup spinach
1 cup watery lettuce (such as romaine)
1 cup mango or pineapple (or 1/2 of each)
1/2 parsley
1/2 cilantro
5 tsp Spirulina or chlorella powder (optional)
1 Lime
Easy Carrot Soup
1.5 — 2 LB Carrots (1 bunch)
Olive oil for cooking in
1 Yellow onion
1 can coconut milk/coconut cream
1 inch knob ginger
3 cloves garlic
1/2 teaspoon turmeric
Red chili flakes
Toppings:
Squeeze of lime
Olive oil
Feta
Parsley / Arugula / Cilantro / Basil
Heat olive oil on medium and add 1 chopped onion. Saute until translucent and add crushed/chopped garlic. Cook until fragrant and add turmeric, salt, and pepper.
Add in diced carrots and saute for about 5 minutes to enhance the flavor.
Next, add 5 cups filtered water or broth. I use water and the result is very flavorful!
Bring to boil for 20 minutes and add diced ginger. Add coconut milk, bring to simmer, making sure carrots are soft before blending.
Blend with hand mixer or Vitamix.
Roasted Lemony Greek Potatoes with Oregano
Potatoes sometimes get a bad rep in the nutrition world, and while I don’t think we should eat them all the time there is certainly no harm in them once in awhile! Rich in minerals and easy to digest, potatoes are starchy magic. If you are craving fried french fries, make these as a great alternative. I promise, it’s even better.
Cut potatoes in quarters, toss with olive oil. Sprinkle paprika, oregano, and salt and pepper.
Add the juice of one whole lemon, leave lemon in the pan with the potatoes, and place in the oven for around 40 min. until tender.
Use the fork test if needed to check if they’re done.
